Grilled Peach and Arugula Salad with Burrata Cheese

  • 4 ripe peaches, halved and pitted

  • 2 tablespoons olive oil, divided

  • 4 cups arugula

  • 4 oz of burrata cheese

  • 1/4 cup toasted pine nuts

  • 2 - 3 tablespoons balsamic vinegar

  • Salt and pepper to taste

  • Fresh basil leaves for garnish


Instructions

  1. Preheat the grill to medium-high heat.

  2. Brush the peach halves with 1 tablespoon of olive oil. Place the peaches on the grill, cut side down, and grill for about 3-4 minutes until they have grill marks and are slightly softened. Remove from the grill and set aside.

  3. In a large bowl, toss the arugula with the remaining 1 tablespoon of olive oil and season with salt and pepper. Arrange the arugula on a serving platter.

  4. Place the grilled peach halves on top of the arugula. Tear the burrata cheese into pieces and distribute it evenly over the salad. Sprinkle the toasted pine nuts over the top.

  5. Drizzle the balsamic vinegar over the entire salad. Garnish with fresh basil leaves. Serve immediately.
