Avocado Spinach Sandwich

  • 2 tablespoons hummus

  • 1/4 cup avocado, sliced

  • 1 tomato, sliced

  • 1 cup fresh spinach

  • 1/4 cup sliced red onion


Instructions

Toast bread to your desired crispiness. Spread hummus evenly on one side of each slice. Layer spinach leaves on one slice of bread, followed by avocado, tomato, and onion slices. Place the second slice of bread on top, hummus side down. Enjoy a satisfying, high-fiber, nutrient-packed, plant-based meal!
