Salmon & Spinach Power Bowl
Ingredients (Serves 4):
4 (4-oz) salmon fillets
2 cups cooked quinoa
4 cups baby spinach
1 cup cherry tomatoes, halved
1 avocado, sliced
2 Tbsp olive oil
Juice of 1 lemon
Salt & pepper to taste
Instructions:
Preheat the oven to 400°F (200°C). Season the salmon with salt, pepper, and lemon juice. Bake 12–15 minutes or until cooked through.
Divide quinoa and spinach among four bowls.
Top with slices of salmon, tomatoes, and avocado.
Drizzle with olive oil and serve warm.
